Happy ThanksGiving to you all (though 2 days late). This Thanksgiving is my 1st time roasting turkey. Yes, i'm talking about the whole 16lbs big bird. The amount of work is quite a lot i'll say, from shopping for ingredients to preperation to serving the turkey along with side dish. The stock and brine alone took me one whole night before Thanksgiving. On the actual day i had to wake up early to rush to market to purchase missing items and rush home to start on the stuffing for the turkey. Luckily my friend stayed over and helped me with the whole process and therefore we were able to serve it and the sides on time. The end result is spectacular (tender and juicy) seeing it's our very 1st doing it. To be honest to you guys it's really out of my comfort zone and i'm having a serious hang over while i'm doin the stock and brine. I'm glad together with some degree of sadness to see friends and family happily consuming the turkey wishing that she can be here enjoy the meal with the always charming smile her face.
